Preheat oven to 325F.
Remove seeds from the dates and core the apples. If the dates are rock hard, warm up apple cider in the microwave and soak the dates for 20-30 minutes. Place the dates in a food processor and roughly chop. Slowly pour in apple cider.
Core the apples and cut in half. Thinly slice the apples about ¼-inch thick. (I like to use Mactinosh apples because they bake well, but you can use any apple.) Once all of the apples are sliced, toss them with 2 tablespoons lemon juice, a tiny pinch of salt, 2 tablespoons of sugar and 3 tablespoons light brown sugar. Set aside.
Sift together dry ingredients and set aside. Using a stand mixer fitted with the paddle attachment, beat eggs and sugars at medium speed until light in color and fluffy. Add vanilla, then melted butter. Slowly add the dry ingredients and mix slowly just until incorporated. Then add the heavy cream and apple date mixture, mix until incorporated.
Lightly grease a baking pan and dust with flour, tapping out the excess. Pour your batter in evenly.
Place sliced apples on top of your cake and bake for 15-20 minutes, until golden brown and a toothpick comes out clean. Let cool and rem
