ACORN SQUASH
The first taste of acorn squash every fall is an exciting reminder of the rich and complex flavors and real cooking of autumn. So while we were busy eating the simple and delicious summer tomatoes and mozzarella, the acorn squash, still growing, was soaking up the sweetness of the sun and gearing up for our fall menu.
In both appearance and flavor, acorn squash is the ideal autumn vegetable - offering hearty flavors that accompany fall dishes. The oval-shaped squash has a ribbed, dark green skin and brightly colored flesh - emulating the beautiful fall foliage.
Like most winter squash, acorn squash have hard, thick skins. And although categorized in the winter squash family, they are available year - round and can be found in any market.
It’s best to store them in a cool, dark and well-ventilated place for up to one month.
