Ingredients
1 pound coarsely ground pork butt or shoulder
1/2 pound pancetta, coarsely ground by butcher
1 tb coarse sea salt
1 tablespoon freshly ground black pepper
1/2 tablespoon fennel pollen or fennel seeds
3 tablespoon freshly chopped parsley
1/4 cup dry white wine
Mix all ingredients in a standing mixer with a dough hook for 5 minutes or until well mixed and then chill for one hour.
Stuff into casings if so desired. For the below recipe just leave it loose. You will need 1 pound for the recipe so use the remaining 1/2 pound for some sandwiches
