SPICY PORK CRACKLING FROM SENISE


Around the world Grattons, Scratchings, and Scrunchions are the popular, savory indulgences known to most Northern Americans as Pork Cracklings. Comprised of salt, high temperature and dry skin, Pork Crackling is the layer of golden-brown crispy fat that forms on the top of a pork roast. We have added cayenne pepper and black peppercorn to add spice and bring out the flavors.
In the heart of Bastilicata lies Senise, a small town with a big bite.
 
The Senise pepper, which can be eaten fresh or is often turned into a powder, is dark red in color and has put Senise on the map. It is cultivated in the small southern villages in the Basilicata region. It is used to flavor cured meats, cheeses, and soups.
