Every fall, the first taste of acorn squash is an exciting reminder of the rich and complex flavors of autumn. While we were busy eating simple and delicious summer ingredients, the acorn squash was soaking up the sweetness of the sun and gearing up for our fall menu.
In both appearance and flavor, acorn squash is the ideal autumn vegetable . The oval-shaped squash has a ribbed, dark green skin and brightly colored flesh that emulates the beautiful fall foliage.
Like most winter squash, acorn squash has a hard, thick skin. Although it belongs to the winter squash family, acorn squash is available year-round and can be found in any market.
