SPICY PORK CRACKLING

Around the world, Grattons, Scratchings, and Scrunchions are the popular, savory indulgences known to most Northern Americans as Pork Cracklings. Comprised of salt, high temperature, and dry skin, Pork Crackling is the layer of golden-brown crispy fat that forms on the top of a pork roast. We add cayenne pepper and black peppercorn to add spice and bring out the flavors.
