WOOD PIGEON

Pigeon has an image problem. Most people think of pigeons as pesky, dirty and bothersome birds. But if you can get past their bad reputation, you’ll learn what so many Umbrians (and others) already know: pigeon tastes great! Of course, it’s important to note that when sourcing pigeon, only rural or wild game will do (city pigeons will not!). The pigeons we source have lean meat that’s exquisitely flavored, with an intense game taste. When cooking pigeon, rare to mid-rare is the way to go for the most tender and juicy meat.
